Known in Brazil as Picanha and in the States as Coulotte, this cut is a hidden gem—and once you’ve had it, you’ll wonder why it ever stayed a secret. Our Wagyu F2 Picanha comes straight off the top sirloin of our pasture-raised Wagyu-Angus cross cattle here at Iberico Acres.
These animals are raised slow and finished right—on a mix of corn, barley, and sorghum—for bold, beefy flavor with that signature Wagyu marbling that melts as it cooks. We don’t mess with hormones or shortcuts—just good feed, open pasture, and honest care.
This cut is a favorite at the farm when we fire up the grill. That thick fat cap crisps up beautifully, basting the meat as it cooks. Slice it thin across the grain and you’ve got yourself a plate of rich, juicy steak that’s built for sharing—if you can part with it.
